The following are easy Valentine Day recipes of foods you can prepare to enjoy with your loved one:


Chocolate Pudding
Ingredients
2 cups milk
8 tablespoons white sugar
4 tablespoons cocoa powder
3 tablespoons cornstarch
2 teaspoons vanilla extract

Instructions
Mix the sugar, cocoa and cornstarch in a bowl.
Gradually whisk in the milk until mixture is smooth and fully mixed.
Cook the mixture over moderate heat while stirring constantly until the mixture thickens and become shiny (around 7 minutes).

(You can also cook it in the microwave on high for 3 minutes. Remove from the microwave and stir. Then cook for 1 minute intervals while stirring until the mixture thickens like mayonnaise.)

Remove from the heat source and add in the vanilla.
Pour elegant champagne glasses and cover with pudding with plastic wrap to prevent a skin from forming.
Chill in the refrigerator for at least 1 hour.
Before serving garnish with strawberries and whipped cream if so desired.


Chocolate Platter
Ingredients
2 bars dark chocolate
2 bars dark chocolate
2 bars dark chocolate
2 cups Strawberries, blueberries or other berries

Instructions
Chop the chocolate into bite sized pieces and serve them on a decorative platter with the berries.


Red Watermelon Smoothie
Ingredients
2 cups banana slices               
2 cups watermelon cubes
1 cup orange juice
5 ice cubes

Instructions
Put all the ingredients in the blender and mix for a few minutes until you get a smooth consistency.
Serve garnished with fruit wedges.


Pink Mango Smoothie
Ingredients
1 cup frozen mangos              
1 cup banana slices
½ cup water               
½ cup powdered milk 
½ cup of edible rose petals
Pink food coloring      
Honey to taste (optional)

Instructions
Put all the ingredients (except the food coloring) in the blender and mix for a few minutes until you get a smooth consistency.
Add the pink food color drop by drop until you get your desired shade,
Serve garnished with fruit wedges and cocktail umbrellas.


Chocoholics Smoothie
Ingredients
2 cups peeled sliced bananas
1 cup chocolate yogurt
2 tablespoons cocoa
2 tablespoons chocolate syrup
5 ice cubes

Instructions
Put all the ingredients in a blender and blend until smooth. Serve garnished with chocolate shavings. 


Chocolate Fudge
Ingredients
1 pound semisweet chocolate, chopped or 2 cups semisweet chocolate chips
14 ounce condensed milk
3 tablespoons butter
1 teaspoon salt
1 cup walnuts or pecans, chopped
1 teaspoon vanilla extract
2 teaspoons cinnamon powder (optional)

Instructions
Line a baking pan with parchment paper and ensure it overhangs the sides.
In a double boiler heat the chocolate, condensed milk, butter and salt while stirring until smooth. (around 7 minutes)
Remove from the heat source and add in the nuts and vanilla extract.
Pour the mixture into the baking pan, smooth the surface with a spatula, cover and chill until firm for 3 hours to 3 days.
Run a knife around the edges of the pan to loosen the fudge. Lift the fudge using the overhanging parchment.
Cut into 1 inch squares. Serve chilled.


Chocolate Vanilla Smoothie
Ingredients
2 cups peeled sliced bananas
1 cup yogurt
2 scoops vanilla ice cream
2 tablespoons chocolate syrup
2 teaspoons vanilla extract
5 ice cubes

Instructions
Put all the ingredients in a blender and blend until smooth. Serve garnished with strawberries. 


Chocolate Peppermint Smoothie
Ingredients
2 cups peeled sliced bananas
1 cup yogurt
2 tablespoons chocolate syrup
2 peppermint candies crushed
5 ice cubes

Instructions
Put all the ingredients in a blender and blend until smooth. Serve garnished with fresh peppermint leaves. 


Pink Strawberry Smoothie
Ingredients
3 cups of frozen strawberries
1 cup banana slices
2 cups cow milk or coconut milk
Pink food coloring      

Instructions
Put all the ingredients (except the food coloring) in the blender and mix for a few minutes until you get a smooth consistency.
Add the pink food color drop by drop until you get your desired shade and serve.


Chocolate Covered Cookies

Ingredients
9 ounces (or 270 grams) of chocolate
20 cookies (your loved one's favorite brand)
¼ cup finely shredded coconut

Instructions
Chop the chocolate with a sharp paring knife
Microwave the chopped chocolate for 1 minute to melt it. Stir and then reheat it for another minute to make a smooth paste. You can also melt the chocolate in a double boiler by placing it in a heat proof bowl over simmering water for 5 minutes as you stir it.
Line a baking sheet pan with waxed paper
Dip each cookie in the chocolate paste twirl it around leaving an uncoated segment.
Dip the cookie with the melted chocolate in the shredded coconut.
Set it on the waxed paper for 15 minutes before serving the cookies on a platter.
